Gepuk Basah with Coconut Serundeng (Sweet Braised Beef with Toasted Coconut)

  1. Toast the 200 g grated coconut over medium heat, stirring constantly, until dry and golden brown; set aside for the serundeng.
  2. Pressure-cook the 500 g beef for about 20 minutes (timed from when the valve starts hissing) over medium heat.
  3. Once cooked, release the pressure from the cooker, then open it and cut the meat along the grain.
  4. Pound the meat with a meat mallet until fairly thin and flat (flip and pound both sides) so the seasoning can soak in easily.
  5. Blend 75 g galangal with a little water separately; set aside.
  6. Blend the spice paste: shallots, garlic, candlenuts, large red chilies, ginger, nutmeg, ground pepper, and coriander seeds with a little oil.
  7. Sauté the spice paste with bay leaves and lemongrass over low heat until cooked through.
  8. Add the blended galangal, stir to combine, and sauté briefly.
  9. Add the pounded beef, then add 200 ml water, salt, beef bouillon powder, sugar, palm sugar, and a little tamarind water; stir to combine.
  10. Cook over medium heat, stirring occasionally, until the seasoning is absorbed and the liquid reduces and dries up.
  11. Add the toasted coconut, stir until well combined and slightly dry; adjust the seasoning to taste.
  12. Top with fried shallots before serving with sambal bajak.
