  1. Cut out puff pastry circles using a ring cutter (two sizes: large and small), and round off the edges.
  2. Stack two large puff pastry rings with their centers punched out (using the small ring) on top of a whole puff pastry circle to form the walls of a bowl.
  3. Brush the edges and surface of the puff pastry with a mixture of 1 egg yolk and half an egg white so the layers stick together and turn a shiny golden color when baked.
  4. Bake the puff pastry bowls in a preheated oven at 195C, top and bottom heat, for about 10-15 minutes until puffed and golden brown.
  5. Meanwhile, cut the onion, mushrooms, green beans, carrot, and chicken into small cubes.
  6. Heat butter, saute the onion and carrot (which take longest to cook) first until about a quarter cooked.
  7. Add the mushrooms, cook until half done, then add the chicken, and add a little water so the carrot cooks through evenly.
  8. Add the green beans last since they cook quickly, then stir in the flour as a thickener.
  9. Pour in the cream and powdered milk at the end (so the cream doesn't split), stir until it thickens into a cheese-sauce consistency, then add parmesan and mozzarella, cook until melted and slightly thick.
  10. Take the puff pastry out of the oven, press or scoop out the center to make room, then line the base with grated mozzarella as a seal before filling (so it doesn't leak).
  11. Fill the puff pastry bowls with the creamy chicken-vegetable filling (about 4 tbsp each), top with grated mozzarella, then bake again briefly until the cheese melts.
  12. Sprinkle with chopped parsley, and serve with a side salad (iceberg lettuce and red onion tossed with balsamic, honey, and olive oil dressing).
