  1. Grind the shallots, garlic, ground coriander, curry powder, salt, and a little turmeric powder with ginger, oil, and water.
  2. Saute the ground paste until fragrant, then add pandan leaves and curry leaves.
  3. Add the chicken (1 kg) that has been cleaned.
  4. Add chicken stock (800 ml), bring to a boil, then lower the heat and simmer until the liquid reduces and the seasoning is absorbed.
  5. For the ganja sambal, cook the shrimp only until they change color (not fully cooked).
  6. Pound the shallots smooth in a mortar, then add the curly red chilies, curly green chilies, and red bird's-eye chilies.
  7. Add the kaffir lime leaves with the center rib removed and thinly sliced, plus the bilimbi (belimbing wuluh).
  8. Prepare hot oil mixed with a little coconut oil, pour it into the mortar, and pound together with the shrimp until crushed.
  9. Season the sambal with salt, chicken powder, sugar, and white pepper, and mix well.
  10. Once the liquid on the chicken has reduced, remove and drain briefly before frying.
  11. Fry the chicken in hot oil over medium heat, turning to cook evenly.
  12. Once the chicken is about 3/4 cooked, add the garnish (pandan leaves, curry leaves, curly red and green chilies) to the oil, fry briefly with the chicken, then remove and serve with rice and the ganja sambal.
