  1. Cut the white tofu into cubes.
  2. Crack the eggs (2 whole eggs + 2 egg yolks), and whisk without seasoning yet.
  3. Season the egg with five-spice powder, ground coriander, and totole seasoning (no salt yet, since the salted egg added later is already salty).
  4. Add the seasoned tofu into the egg mixture, stir, and let it marinate briefly.
  5. Prepare coarsely chopped garlic, sliced curly red chilies, scallions (for the final garnish), and curry leaves (picked, stems discarded).
  6. Separate out the salted egg yolks only (the whites aren't used), then crush them.
  7. Mix cornstarch (more) and tapioca starch (a little) into the marinated tofu, and mix well by hand.
  8. Make sure the tofu is evenly coated in the flour.
  9. Heat oil, and fry the curry leaves first so the oil is infused with their aroma and the leaves turn crisp.
  10. Fry the flour-coated tofu, then pour the remaining egg batter over the frying tofu to give it a lacy, netted texture, and strain the result.
  11. Heat oil, and saute the garlic and chilies until browned and cooked.
  12. Add the salted egg yolks, cook until foamy, then turn off the heat and add the fried tofu.
  13. Season with salt, a little totole seasoning, and sugar to balance the flavor, then add the curry leaves last and serve.
