Ingredients

Steps

  1. For the smashed egg with basil chilli sambal, heat oil and fry the green bird's eye chillies, shallots and garlic until browned, about 3 to 4 minutes.
  2. Drain the chillies and aromatics, then transfer them to a mortar.
  3. Season with MSG, salt, pepper and chicken stock powder, add the Thai basil leaves, then pound to a coarse paste.
  4. Using the oil left from frying the chillies, fry 3 eggs sunny side up until the edges are browned.
  5. Lift out the eggs and serve them with the basil chilli sambal and extra fresh basil leaves.
  6. For the egg and tofu in sweet soy sauce, cut up the tofu and fry it with a little salt until both sides are browned.
  7. Push the tofu to the side of the pan, then fry the sliced red bird's eye chillies, spring onion and garlic until softened.
  8. Crack 2 eggs into the empty part of the pan and cook until half set.
  9. Pour in a little water, oyster sauce, sweet soy sauce and chicken stock powder, then stir gently until the sauce is absorbed and thickened.
  10. Lift out the tofu and eggs first so they do not break up, then serve.
  11. For the egg and luffa, peel the luffa completely, then cut it into pieces.
  12. Heat about 4 tablespoons of oil, then fry the chopped garlic and bird's eye chillies until the garlic is lightly browned.
  13. Add 1 tablespoon of ground dried shrimp and fry briefly until fragrant.
  14. Add the luffa pieces, then crack the eggs on top and stir until the eggs break up through the vegetables.
  15. Add pepper and water, then cook until the luffa softens and the liquid is absorbed.
  16. Add oyster sauce and fish sauce, then adjust the taste with chicken stock powder and a little salt.
  17. Cook until the sauce thickens slightly and the luffa is completely tender.
  18. Take it off the heat and serve while warm.
