  1. Trim the sinew from the beef shank so it tenderizes quickly during cooking.
  2. Blend the seasoning: shallots, garlic, toasted coriander, toasted cumin, candlenuts, white pepper, and sliced galangal and ginger, add a little oil, and blend until smooth.
  3. Saute the ground seasoning, add the bay leaves, kaffir lime leaves, and cinnamon stick, and saute until cooked and lightly browned.
  4. Season with salt and beef bouillon, then add the beef (not cut into small pieces), and pour in the rice-washing water.
  5. Add the aromatics: bruised galangal, scallion, bay leaves, and celery stalks, then pressure-cook for about 40-45 minutes.
  6. For the tauco sambal, cut the large red chilies, then blend the red bird's-eye chilies.
  7. Saute the blended chilies until cooked, then add the sweet tauco paste, tofu, and a little MSG, and taste.
  8. Once the beef is cooked, cut it into cubes, strain the broth to remove the spices, then return the beef to the broth.
  9. Fry the peanuts until browned, then blend into a powder, and add enough to the broth for thickness.
  10. Serve the coto topped with celery, scallion, tauco sambal, and a squeeze of lime.
