Ingredients

Ground spice paste:

Whole spices:

Garnishes:

Steps

  1. Wash 500 g of beef clean, then drain it.
  2. Bring 3 litres of water to a boil in a pot, add the beef, then simmer over medium heat until tender.
  3. While it simmers, grind 9 shallots, 5 cloves of garlic, 2 cm ginger, roasted turmeric, 4 toasted candlenuts, and a third of a teaspoon of cumin with a little cooking oil.
  4. Once the beef is tender, lift it out and drain it, keeping the cooking broth aside.
  5. Cut the beef into pieces to your liking.
  6. Heat a little oil in a wok, then saute the ground spice paste.
  7. Add the whole spices: bay leaves, kaffir lime leaves, bruised galangal, cardamom, star anise, bruised lemongrass, ground coriander, and ground pepper, then saute over medium heat, stirring constantly, until fragrant.
  8. Add the cut beef and two carrots that have been cut into pieces.
  9. Pour in 500 ml of the beef broth, then cook until it boils.
  10. Add 900 ml of medium-thick coconut milk, 2 teaspoons salt, and half a teaspoon of granulated sugar, then cook while stirring constantly so the coconut milk does not split, until boiling.
  11. Add 2 stalks of sliced spring onion and the chopped tomato, stir briefly, then turn off the heat.
  12. Serve the soto with the garnishes.
