Coriander Garlic Fried Chicken (Ayam Goreng Ketumbar Bawang)

  1. Grind the spice paste: garlic, shallots, roasted candlenuts, turmeric, ginger, and coriander seeds (use only the leaves of the kaffir lime, discard the stems), add Totole, salt, a little water, and a little oil.
  2. Taste the spice paste (it's meant to taste quite salty on purpose), then rub it evenly all over the chicken pieces along with the smashed garlic.
  3. Marinate the chicken in the fridge for at least 1 hour.
  4. Make the sambal: fry the green bird's-eye chilies, red bird's-eye chilies, green tomatoes, red tomato, and shrimp paste in plenty of oil until wilted and fragrant.
  5. Coarsely grind the fried sambal ingredients together with sugar, salt, and Totole, then add a squeeze of key lime juice.
  6. Before frying, add a little cornstarch to the marinated chicken for extra crispiness, adding a splash of water if the marinade is too thick.
  7. Fry the chicken in hot oil until cooked and golden brown.
  8. Remove and serve the fried chicken with the bird's-eye chili sambal.
