  1. Boil the beef. Once it boils and the scum rises, throw away the first batch of water.
  2. Replace it with about 2 to 2.5 liters of fresh water and simmer over medium heat until the beef is cooked and tender. Lift out, drain and let it cool a little. Keep the cooking broth.
  3. Cut the beef into small cubes, then set aside.
  4. Crack the kluwek out of their shells by tapping them with a pestle. Taste each one; if it is bitter or mouldy do not use it, keep only the ones with good black flesh. Soak the kluwek in hot water.
  5. Grind the shallots, garlic, roasted candlenuts, turmeric and ginger with a little water until completely smooth, then add the kluwek and grind again until fully smooth.
  6. Heat oil and saute the spice paste with the bay leaves, lemongrass, galangal and torn kaffir lime leaves. Fry over low heat so the paste does not burn, until it is cooked through and the oil separates from the paste.
  7. Add the cubed beef, then pour in 1.5 liters of the reserved beef broth. Stir and bring to a boil.
  8. Once boiling, add the ground pepper, ground coriander, salt, beef stock powder, palm sugar and granulated sugar, stirring until evenly combined.
  9. Cook over low heat until the seasoning has fully soaked into the meat, then turn off the heat.
  10. Serve the rawon topped with sliced spring onion and fried shallots, briefly boiled short bean sprouts, salted egg, lime, and a sambal made from boiled bird's eye chilies ground to a paste.
