Ingredients

Steps

  1. Grind 5 shallots, 3 garlic cloves, 3 candlenuts, 2 thumbs of turmeric and 1 thumb of ginger with a little water.
  2. Rub the spice paste into half a kilo of chicken, then add about 150 ml of water, bay leaves, lemongrass and galangal.
  3. Season with half a teaspoon of ground pepper, half a teaspoon of ground coriander, 1 teaspoon of salt and 1 teaspoon of chicken stock powder, then braise, turning the pieces over, until cooked through.
  4. Beat 1 egg with a little chicken stock powder until slightly foamy.
  5. Heat oil, dip the braised chicken into the egg, then fry it, and pour the leftover egg into the pan so it clings to the chicken.
  6. Once browned, lift the chicken out and drain it.
  7. For the shallot sambal, split 15 red bird's eye chillies and halve 5 shallots, then fry them until softened.
  8. Transfer to a mortar, add a quarter teaspoon of salt, a little MSG and 1 teaspoon of palm sugar, pound it, then pour a little oil over the top.
  9. For the stir-fried mushroom with sausage, boil 200 g of cut mushrooms for 1 to 2 minutes to get rid of their smell, then drain.
  10. Cut 3 sausages into four pieces each, then score the edges.
  11. Thinly slice 3 shallots and 2 garlic cloves, cut 4 fat chillies lengthwise, then set out half a tomato and 2 spring onions.
  12. Fry the shallots and garlic until fragrant, add the fat chillies, then add the sausage.
  13. Add about 150 ml of water, 1 sachet of oyster sauce, 1 teaspoon of chilli sauce, a quarter teaspoon of salt, half a teaspoon of chicken stock powder, a quarter teaspoon of ground pepper, half a teaspoon of sugar and a little sweet soy sauce, cook until the sausage is done, then add the mushrooms, tomato and spring onion and take it off the heat.
