  1. Parboil the short rib meat, rib bones, and beef briefly to remove blood and impurities, then discard the water.
  2. Transfer the meat to a rice cooker, add water to cover, and cook on the boil/rice setting for about 2.5 hours until tender; save the broth for stock.
  3. For the gepuk: cut the beef along the grain, pound it with a meat mallet, then blend shallots, garlic, candlenuts, ginger, galangal, coriander, pepper, and a little nutmeg with water.
  4. For the grilled chicken: blend shallots, garlic, and ginger, then simmer the chicken with the paste, bay leaves, lemongrass, salt, bouillon powder, and water until boiling; add tamarind, palm sugar, and sweet soy sauce, and simmer until the seasoning is absorbed, then set aside the leftover sauce to mix with margarine as a basting glaze for grilling.
  8. For the bacem chicken: cook sliced shallots and garlic with bay leaves, lemongrass, galangal, tamarind, plenty of palm sugar, salt, bouillon powder, sugar, and coriander until the chicken is cooked and the seasoning is absorbed; use the leftover sauce to simmer tempeh bacem.
  9. Boil the chicken feet with bay leaves until cooked, discard the water, and let cool.
  10. Boil the chicken for soup: parboil first to remove blood and impurities, change the water, then boil again until cooked; save the cooking liquid for a flavorful soup broth.
  11. Boil the intestines with bay leaves, changing the water 2-3 times until clean and cooked, then let cool.
  12. Once everything has cooled, portion it into bags sized for a single meal, then vacuum-seal or wrap tightly in plastic.
  13. Store all the stock (meat, chicken, shrimp, fish, broth, basting seasoning) in the freezer, except the tempeh, which just needs the fridge.
