  1. For the bird's-eye chili paste: coarsely chop the shallots, garlic, large red chilies, large green chilies, and red and green bird's-eye chilies, then sauté in hot oil over medium-low heat until fragrant.
  2. Season with oyster sauce, salt, chicken bouillon powder, and sugar, stir well, cook until done, then add the tamarind water at the end and cook until the liquid reduces.
  3. For the balado seasoning: coarsely chop the shallots, garlic, large red chilies, and curly chilies, sauté until fragrant, add the bay leaves, a little water, salt, chicken bouillon powder, ground pepper, and sugar; cook over low heat until done and the oil separates.
  4. For the green sambal: boil the garlic, shallots, green tomatoes, large green chilies, curly green chilies, and green bird's-eye chilies until cooked, drain, then coarsely chop together with oil.
  5. Sauté the chopped green sambal, season with salt, chicken bouillon powder, MSG, and sugar, add a little water, and cook over low heat until done.
  6. For the baby squid & anchovy sambal: fry the dried anchovies until browned, then soak the baby squid in hot water, rinse clean, and fry briefly (not until too dry).
  7. Coarsely chop the shallots, garlic, large red chilies, curly red chilies, and red bird's-eye chilies with oil, then sauté until fragrant.
  8. Season with salt, chicken bouillon powder, sugar, MSG, kaffir lime leaves, and optional palm sugar, cook until done and the oil separates; split in two, mixing one portion with the fried anchovies and the other with the baby squid plus mashed roasted shrimp paste.
  9. For the shallot sambal: slice some of the shallots and fry the rest along with the red and green bird's-eye chilies until wilted, then drain.
  10. Coarsely chop the fried chilies, sauté the sliced shallots until fragrant, mix in the chopped chilies, season with salt, MSG, and sugar, and cook over low heat.
  11. For the salted mackerel sambal: fry the salted mackerel over low heat, then shred the flesh.
  12. Coarsely chop the shallots, garlic, red bird's-eye chilies, and large red chilies with oil, sauté until fragrant, season with salt, chicken bouillon powder, MSG, sugar, and kaffir lime leaves, and cook until done.
  13. Add the shredded mackerel into the sambal, stir well, cook briefly, then let all the sambals and seasonings cool completely before storing them in containers or vacuum bags in the fridge or freezer.
