Guek Pia, Flaky Mooncakes with Mung Bean Paste

Steps

  1. Put 250 g of peeled mung beans that have soaked for at least two hours into a wide tray, then steam for about 30 minutes, opening and stirring now and then so they cook evenly.
  2. Move the cooked mung beans into a chopper, pour in 300 ml thin coconut milk, then process until completely smooth.
  3. Transfer to a pan, add 250 g sugar, 1/3 tsp salt and 3 pandan leaves, then cook while stirring constantly until it is dry enough.
  4. Once the paste bubbles and is dry enough, add 2 tbsp margarine and keep cooking and stirring until the paste no longer sticks.
  5. Turn off the heat, remove the pandan leaves, then transfer to a container and let it cool first.
  6. Weigh out ten 30 g portions of filling and roll them into balls so they are easier to wrap.
  7. For dough A, mix 170 g all purpose flour and 20 g powdered sugar in a wide bowl, make a well in the middle, then pour in 60 g vegetable oil and 80 g room temperature water.
  8. Stir the dry ingredients into the wet ingredients until all the dry ingredients are absorbed.
  9. Knead by hand for 5 minutes, slamming the dough occasionally so it becomes smooth and elastic faster.
  10. Cover the dough with plastic wrap or a cloth, then rest it for 1 hour.
  11. Prepare a 30x30 cm square tray, no baking paper needed, just grease it fairly generously with margarine.
  12. For dough B, put 90 g all purpose flour and 40 g margarine into a bowl, then bring it together with a spatula without kneading.
  13. Pour in 30 g vegetable oil then mix it in by hand until the dough forms clumps.
  14. After one hour, take out dough A and divide it into 10 pieces, rounding each by pulling the dough toward the centre so the surface is smooth, then cover with plastic so it does not dry out.
  15. Divide dough B into 10 pieces and shape them roughly into balls since this dough is quite sticky.
  16. Take one piece of dough A, roll it into a thin round just big enough, place one piece of dough B inside, then wrap it by pulling the dough to the centre and sealing it.
  17. Roll it thin again into an oval about a hand span long, then roll it up.
  18. Roll it out lengthwise again to about one and a half hand spans, working slowly so dough B does not break through, then roll it up again.
  19. Flatten it thin with your palm or a rolling pin, working slowly so the layers do not tear, until it is wide enough to wrap the filling.
  20. Wrap the mung bean filling and seal it, turn it over, press it with your palm, and neaten the shape while pinching the seam so it does not leak while baking.
  21. Arrange them on the tray and keep shaping until all the dough is used.
  22. Bake at 200 degrees Celsius with bottom heat only on the lower rack for about 25 minutes, preheating the oven 10 minutes beforehand.
  23. Take them out, flip them over, press them down, then bake again for 10 minutes.
  24. Take the pastries out of the oven and let them cool before serving.
