Lebaran Feast: Opor Ayam, Rendang, and Sambal Goreng Kentang Ati

  1. Rendang: cut the beef into 20 pieces, then prepare 1500 ml thin coconut milk and 500 ml thick coconut milk.
  2. Grind the shallots, garlic, ginger, ground coriander and nutmeg with a little water, add the large red chilies and red curly chilies, and grind until completely smooth.
  3. Put the beef into a wok with the spice paste, bay leaves, lemongrass, galangal, torn kaffir lime leaves and turmeric leaf, then cook, stirring, until the meat changes color (with no oil at all).
  4. Pour in the thin coconut milk, add the instant rendang seasoning, stir continuously until it boils so it does not split, then cook over low heat until the liquid reduces, turning occasionally.
  5. Add the salt, beef stock powder, palm sugar and thick coconut milk, stir continuously until it boils, then cook over low heat until it thickens and the oil separates, about 4.5 hours total. Serve.
  6. Chicken opor: briefly boil the chicken to remove blood and impurities, then lift out and drain.
  7. Grind the shallots, garlic, candlenuts, ginger, turmeric, ground pepper and ground coriander with a little oil until smooth.
  8. Put the spice paste into a pot with the bay leaves, lemongrass, galangal and torn kaffir lime leaves, and saute over low heat until fully cooked through.
  9. Add 1200 ml water and the boiled chicken, stir, and cook until it boils.
  10. Add the salt, chicken stock powder, sugar and instant coconut milk, stir continuously until it boils so it does not split, then cook over low heat until the chicken is done. Turn off the heat, sprinkle with fried shallots, and serve.
  11. Sambal goreng kentang ati: fry the cut potatoes until cooked, lift out and drain.
  12. Boil the beef liver until cooked, cut into small cubes, then fry briefly over low heat so it does not turn tough.
  13. Grind the shallots, garlic, boiled large red chilies (to remove any raw smell and keep the color bright) and a little nutmeg with oil.
  14. Saute the spice paste with the bay leaves, lemongrass and galangal over low heat until fully cooked through.
  15. Add a little water, the salt, chicken stock powder, sugar and ground pepper, stir to combine, then cook until the liquid reduces.
  16. Add the fried potatoes and liver, stir until combined, cook briefly so the seasoning coats them, then serve.
