  1. Mix the flour, cornstarch, sugar, and salt, and stir well.
  2. Add the water a little at a time while stirring until smooth, then add the rest of the water, add the oil, stir well, and strain the batter.
  3. Transfer the batter into a piping bag, then pipe it thinly and quickly onto a hot nonstick pan over low heat, swirling to form thin strands (kataifi), let sit for a few seconds, then lift off. Repeat until all the batter is used.
  4. Cut up the kataifi strands, then dry-roast over low heat (with a little margarine if you like) while stirring continuously until dry and golden brown.
  5. Fry the shelled peanuts until cooked, remove, drain, and once slightly cooled, process in a chopper until it forms a paste and releases its oils.
  6. Combine the roasted kataifi, peanut paste, and matcha glaze in a bowl, and stir until well combined.
  7. For the pattern, melt the colored chocolate coatings (red, green, yellow) by setting the bowls over hot water that's just been taken off the heat, letting them sit for 5-10 minutes without stirring, then stirring until melted.
  8. Splatter the colored chocolate into the molds to create a pattern, then let it set.
  9. Melt the milk chocolate the same way (set over hot water, let sit, then stir until melted), and let it cool slightly.
  10. Pour the melted chocolate into the patterned molds, tilting to coat the whole base and sides, then pour any excess back into the bowl.
  11. Fill the molds with the kataifi, peanut, and glaze mixture, spreading it evenly.
  12. Pour more melted chocolate over the top and spread evenly, then refrigerate until set.
  13. Once set, remove the chocolates from the molds.
