One Dough, Three Ways: Soup, Chili Oil, and Fried Wontons

  1. Fry the chopped garlic over low heat until golden brown, then remove and set aside.
  2. Sauté the sliced scallions until fragrant and wilted.
  3. Coarsely chop the chicken fillet and shrimp, and mix in a bowl with the sautéed scallions, fried garlic, salt, chicken bouillon powder, sugar, ground pepper, soy sauce, oyster sauce, sesame oil, and beaten egg white, and stir well.
  4. Add the tapioca starch, and stir briefly until combined.
  5. Fill wonton wrappers with half a teaspoon of filling, wet the edges with water, and fold into wontons. Repeat until finished.
  6. Boil the wontons in boiling water with a little cooking oil added, over medium heat for 4-5 minutes until they float, then remove and drain, and drizzle with a little garlic oil so they don't stick.
  7. For chili oil wontons, mix fried garlic, chili oil, Bangkok sauce, and chicken bouillon powder, stir well, then add the boiled wontons and toss to coat.
  8. For soup wontons, mix ground pepper, salt, chicken bouillon powder, soy sauce, and fried garlic with hot water, stir well, add the boiled wontons and pakcoy, and top with fried shallots.
  9. For fried wontons, deep-fry the raw wontons in hot oil over medium heat, flipping until golden brown, then remove and drain.
