Es Gabus (Old-School Layered Hunkue Jelly Snack)

  1. Combine 1 pack hunkue flour (90 g), 7 tbsp sugar, and 1/2 tsp salt; mix the dry ingredients until combined.
  2. Add 1 sachet instant coconut milk and 1 sachet sweetened condensed milk, then pour in part of the 700 ml water; stir until the mixture is smooth with no lumps.
  3. Add the remaining water, stir well, then strain the mixture to make sure it's fully combined.
  4. Divide the mixture into 3 equal portions, tint each with red, yellow, and green food coloring; stir until evenly colored.
  5. Prepare a 10x22 cm pan lined with plastic.
  6. Cook the pink portion over low heat, stirring constantly, until it thickens.
  7. Pour it into the pan and spread evenly.
  8. Cook the yellow portion the same way until thickened, then pour it over the first layer and spread evenly.
  9. Cook the green portion the same way until thickened, then pour it on top as the final layer and spread evenly.
  10. Chill in the refrigerator for about 30 minutes until set.
  11. Carefully unmold and peel off the plastic lining.
  12. Cut the es gabus into pieces, then wrap each in OPP plastic.
  13. Store in the freezer overnight until frozen (or take it out sooner if you prefer a softer texture).
