  1. Split and bruise the lemongrass, and bruise the 3 cm galangal.
  2. Boil 600 ml of medium-thick coconut milk, add the lemongrass and galangal, add the whole bird's-eye chilies (10 pieces, lightly crushed), and turn the heat to low.
  3. Grind: 5 shallots (coarsely sliced), 3 cloves garlic, 3 bird's-eye chilies, 1/2 tsp Desaku turmeric powder, and 1 tsp salt.
  4. Add the ground seasoning to the simmering coconut milk, stir well.
  5. Finely slice the cassava leaves that have been boiled (with 750 ml water and 1 tsp salt), pounded, and drained.
  6. Add the turkey berries and half of the anchovies (25 g out of 50 g), let the seasoning cook through.
  7. Add the cassava leaves, half of the peanuts, and 1 tsp granulated sugar.
  8. Remove the galangal and lemongrass (so they aren't bitten into), turn off the heat, serve, and sprinkle with the remaining peanuts and anchovies.
