  1. Prepare oil for frying, then put 250 g of warm steamed cassava into a chopper along with 2 tsp salt, and chop until it forms a smooth, sticky dough (like getuk).
  2. Flatten the dough with hands dusted in tapioca starch, then roll it out with a rolling pin to about 1 cm thick.
  3. Cut the dough into 1 cm-thick sticks, dust with tapioca starch so they don't stick.
  4. Fry the cut pieces over not-too-high heat until they puff up and turn crisp, then remove and set aside.
  5. Grind the seasoning: 3 candlenuts, 5 cloves garlic, 5 shallots, 1/4 nutmeg, 3 cm ginger, 1 tsp Desaku turmeric powder, 1 tbsp Desaku ground coriander, 1/2 tsp Ladaku ground pepper, and 1 tbsp salt with a little water.
  6. Tear the kaffir lime leaves and bruise the lemongrass.
  7. Heat 4 tbsp cooking oil over medium heat, sauté the ground seasoning until fragrant.
  8. Add the kaffir lime leaves and lemongrass, sauté until fragrant and cooked, then add the leek.
  9. Add the chicken breast, stir until it changes color.
  10. Pour in 2 ladles of broth, cook until it reduces by about 50%.
  11. Pour in the rest of the broth (1500 ml total) and 2 tsp sugar, stir, bring to a boil, then cover and lower the heat until the chicken is cooked.
  12. Remove the cooked chicken and shred it.
  13. Arrange the glass noodles and shredded chicken in a bowl, ladle over the hot broth, then add the fried cassava crackers, blanched bean sprouts, fried shallots, garlic chives, sliced egg, soto sambal, and lime to taste.
