  1. Grate the lemon zest, using only the yellow part (1 tsp).
  2. Chop the garlic, red bird's-eye chilies, green bird's-eye chilies, and grated lemon zest in a food processor.
  3. Transfer to a jar.
  4. Add fried shrimp paste (1/2 tsp), light soy sauce (2 tbsp), lemon juice (3 tbsp), and sugar (2 tbsp), and stir until the sugar dissolves.
  5. Put the marinade seasoning (1 sachet) into a bowl for the chicken, but replace the water it's usually dissolved in with coconut milk.
  6. Stir until the salt dissolves.
  7. Add the minced garlic (4 cloves), and the bruised galangal (3 cm) and ginger (3 cm).
  8. Add sugar (1 tbsp), and mix well.
  9. Add the chicken, and mix well until fully coated with the seasoning.
  10. Turn on medium heat, let it come to a boil, then cover.
  11. Once boiling, lower the heat and cook for 20 minutes with the pot covered.
  12. Uncover the pot, cook for another 30 minutes uncovered, then turn off the heat and let the chicken cool while submerged in the braising seasoning.
  13. Heat oil over medium heat (not too hot, since the chicken contains sugar), then fry the chicken until cooked, flipping so it doesn't get too browned, and serve with the sweet-sour shallot sambal.
