Tuna Jaw & Charred Sambal (Manado Style)

Steps

  1. Cut tuna jaw into two pieces then marinate with salt, black pepper and lime juice, even out
  2. Remove seeds from green and red tomato then cut into small pieces. Slice shallots and red bird's-eye chilies
  3. In bowl mix sweet soy sauce, green tomato, red tomato, shallots, red bird's-eye chilies and lime juice, stir well then add salt, stir well
  4. Slice white part of lemongrass and ginger. In food chopper, add garlic, lemongrass and ginger, blend then add shallots and red bird's-eye chilies, blend
  5. Place spice mixture in wok, add oil and cook until fragrant then add salt, flavor enhancer and sugar, stir well
  6. Add water, cook briefly then transfer to stainless steel bowl
  7. Heat charcoal with blow torch or heat charcoal over stove. Place some hot charcoal into charred sambal and cover. Let sit briefly then remove charcoal
  8. Place tuna jaw over charcoal with hard part facing down. Mix margarine with minced garlic, stir well and brush on both sides of tuna jaw
  9. Flip tuna jaw then brush again with margarine on both sides, grill until cooked and dry
  10. Mix sweet soy sauce and oyster sauce, stir well then brush on both sides of tuna jaw, grill briefly. Place charred sambal on top of tuna jaw
  11. Heat oil, fry tuna jaw until half-cooked, drain then grill and brush with margarine on both sides, grill until golden
  12. Brush with sweet soy sauce mixture, grill briefly
  13. Tuna jaw charred sambal is ready to serve
