  1. Tip 400 grams of pearl sago into 1500 ml of boiling water, stirring briefly.
  2. Drop in 5 to 6 drops of dark red food coloring plus 2 pandan leaves, stirring so the color spreads evenly.
  3. Once the water starts to reduce, pour in another 500 ml of water, then cook for about 50 minutes over medium heat.
  4. After 50 minutes, stir the sago, add 225 grams of granulated sugar plus 1/2 teaspoon of salt, stirring until evenly combined.
  5. Turn off the heat, rest it for about 15 minutes so the pearls cook through, then take the pot off the stove.
  6. Prepare a 17x17 cm pan, line it with banana leaf, then spoon in the pearl sago.
  7. Place it in the preheated steamer, then steam for about 15 minutes over medium heat.
  8. After 15 minutes, open the steamer, then let it cool.
  9. For the coating, combine grated coconut from 1 coconut, 1 teaspoon of salt, 2 tbsp of granulated sugar, plus 2 pandan leaves, mixing evenly.
  10. Steam the grated coconut for about 10 minutes over medium heat.
  11. Cut a piece of the sago cake, roll it in the grated coconut, then serve.
