Fried Taro Balls with Peanut Coating (Ou Ie)

  1. Grate 500 g taro on the coarsest holes of a grater.
  2. Add 50 g tapioca starch to the grated taro.
  3. Add the chopped dried shrimp, the grated garlic and the sugar.
  4. Add the salt, mushroom stock powder and pepper.
  5. Add the chopped spring onion and celery leaves.
  6. Pour in 1.5 tbsp vegetable oil.
  7. Mix until everything is evenly combined.
  8. Tip 200 g chopped peanuts onto a wide plate so they are easier to roll in.
  9. Take a portion of the mixture and roll it into a ball; keep them small so they cook through quickly.
  10. Roll each ball in the peanuts until fully coated, pressing as you go so the peanuts do not fall off while frying.
  11. Repeat until all the mixture is shaped.
  12. If you are not frying them right away, keep the balls in a covered box in the chiller or freezer.
  13. Heat plenty of oil, ideally deep enough to submerge the taro balls.
  14. Fry over medium low heat, turning now and then, so the peanuts do not burn before the filling is cooked.
  15. Once the peanuts are golden brown, lift them out and drain.
  16. Serve warm with the dipping sambal.
