Egg Saving Nastar Pineapple Tarts

  1. Roll 400 g pineapple jam into balls using a 1/2 tsp measuring spoon so they are all the same size.
  2. Combine 100 g butter with 100 g margarine in a bowl.
  3. Add 40 g granulated sugar, which gives the shell a crunchy bite.
  4. Whisk by hand, no mixer needed, until the butter and margarine are soft and smooth.
  5. Add 1 egg yolk and half of the egg white, then mix well.
  6. Add 15 g milk powder and 10 g cornstarch, then mix until evenly combined.
  7. Add two thirds of the flour first and mix until combined.
  8. Add the remaining third, but hold a little back so the dough does not turn out too dry.
  9. Carry on mixing with your hands, it is easier that way.
  10. Work in the last of the flour until the dough feels right, neither too dry nor too soft.
  11. Get a cookie tray ready; there is no need to grease it or line it with baking paper, the dough will not stick.
  12. Portion the dough with a 1 tsp measuring spoon so all the tarts are the same size.
  13. Roll each portion into a ball.
  14. Press the centre with your index finger to make a hollow big enough for the jam.
  15. Put in a ball of pineapple jam, pressing only lightly so the round shape is not lost.
  16. Crimp around the edge with nastar tongs to create a flower pattern.
  17. Arrange them on the tray and continue until all the dough is used.
  18. Vary the angle of the crimping, straight or slightly slanted, for different patterns.
  19. Preheat the oven for 10 minutes, then bake at 180 degrees Celsius with top and bottom heat on the lower rack for 38 minutes or until done.
  20. Once baked, take the tarts out of the oven.
  21. Wait until they are completely cool before packing them into jars.
