Rabbit Shaped Nastar Pineapple Tarts

Steps

  1. Scoop the pineapple jam with a 1 tsp measure and roll it into balls; each ball weighs about 7 g.
  2. Grease the baking tray with margarine, then line it with baking paper.
  3. Combine 100 g butter, 100 g margarine and 40 g sugar in a mixing bowl.
  4. Whisk by hand until light and soft; no mixer needed.
  5. Add 1 egg yolk and half of the egg white.
  6. Add 1 tsp vanilla extract, then whisk until combined.
  7. Add 15 g milk powder and 20 g cornstarch, then mix well.
  8. Add 300 g plain flour, holding a little back so the dough does not turn out too dry.
  9. Keep mixing with your fingertips rather than kneading, until the dough no longer sticks to your hands; add the reserved flour bit by bit if it is still sticky.
  10. The dough is ready when it feels dry to the touch and is easy to shape.
  11. Portion the dough with a 1 tbsp measuring spoon so every tart is the same size; the shell needs to be fairly thick for the rabbit shape.
  12. Keep the portioned dough covered so it does not dry out.
  13. Get ready a small thin pair of scissors and some toasted black sesame seeds.
  14. Take one portion of dough and roll it into a ball.
  15. Press the centre with your thumb and turn it to hollow out a little cup.
  16. Put in one ball of pineapple jam, then seal it closed.
  17. Roll it round again until the surface is smooth.
  18. Shape one end so it tapers slightly, but not to a sharp point.
  19. Snip the top with scissors to form the rabbit's ears.
  20. Press in two black sesame seeds for the eyes.
  21. Arrange the tarts on the tray and repeat until all the dough is used.
  22. Bake at 140 degrees Celsius with top and bottom heat for 35 minutes or until done, turning the tray halfway through for even baking.
  23. Take them out of the oven and let them cool.
  24. Make the glaze by mixing 2 egg yolks with 1 tsp water and 1 tsp vegetable oil until smooth.
  25. Once the tarts are cool, brush the glaze on; repeat 2 to 3 times for the best finish.
  26. Bake again at 130 degrees with top heat only for 15 minutes, or until the colour is as deep as you like.
