Bun Sawi Putih, Braised Napa Cabbage with Pork Ribs

  1. Cut off the base of the napa cabbage, separate the leaves, then wash them well.
  2. Blanch the leaves in boiling water in three or four batches until wilted and translucent, then lift them out and drain.
  3. Wait until they are cool enough to handle, then squeeze each leaf to force out the absorbed water.
  4. Pat the leaves with kitchen paper to dry them further.
  5. Fry each leaf over low heat until golden brown; this is the most important step, as it drives off the raw cabbage smell.
  6. Drain them, then press them again to remove excess oil.
  7. Squeeze out 3 shiitake mushrooms that have been soaked overnight, and keep the soaking water for the broth.
  8. Cut the mushrooms fairly thick, or leave them whole if you prefer.
  9. Cut 1 kg of pork rib cartilage into pieces; not too thick, so they do not take forever to cook.
  10. Take a pot, heat a little oil, then add 10 cloves of garlic and the mushrooms, cooking until fragrant and golden.
  11. Add the cut pork and cook until it changes colour.
  12. Add 3 tbsp dark soy sauce.
  13. Add 2 tbsp oyster sauce.
  14. Add 1.5 tsp salt, or hold it back until later if you want to adjust the saltiness yourself.
  15. Pour in 1 litre of water plus the mushroom soaking water, then cook until it boils.
  16. Turn the heat down low.
  17. Add 1 tbsp Shaoxing wine.
  18. Add 30 g rock sugar, or use granulated sugar instead.
  19. Cook over low heat until the liquid reduces.
  20. Add another 500 ml of water, then cook again until it reduces.
  21. Add a final 500 ml of water, making 2 litres in total, and cook until the meat is tender.
  22. Once the meat is tender, add the blanched and fried napa cabbage.
  23. Keep cooking over low heat until the cabbage turns brown.
  24. Turn off the heat, cover the pot and let it rest; this dish is at its best reheated the next day.
