Steps

  1. Sift 225 g all-purpose flour, 1/2 tsp baking powder and 1/2 tsp baking soda into a bowl, then set it aside.
  2. Put 125 g granulated sugar into a pot and cook over low heat until it turns to caramel; do not stir, just swirl the pot.
  3. Keep cooking until the caramel comes to a boil.
  4. Add 250 ml of water a little at a time so it does not spit, then cook again until it comes back to a boil.
  5. Turn off the heat and let the caramel liquid cool to lukewarm.
  6. Put 125 g granulated sugar, 2 eggs and 1/4 tsp vanilla into a bowl.
  7. Beat at maximum speed for about 7 minutes until the batter is voluminous and thick.
  8. Pour in the lukewarm caramel liquid a little at a time while mixing on low speed until evenly combined.
  9. Add the flour mixture a little at a time while mixing on low speed until evenly combined.
  10. Turn off the mixer and fold with a spatula to make sure the batter is evenly combined.
  11. Add 75 g melted margarine, then fold from the bottom up until no melted margarine is left settled at the base of the bowl.
  12. Grease the sakura moulds thinly with cooking oil.
  13. Fill the moulds three quarters full, leaving about 0.5 cm of space since the cakes will rise while steaming.
  14. Steam for about 15 minutes over medium heat in a steamer whose water is already boiling, and wrap the steamer lid in a clean cloth so condensation does not drip onto the batter.
  15. After 15 minutes, take the moulds out of the steamer, then steam the remaining batter the same way.
  16. Release the cakes by pressing the moulds gently, then serve.
