Ingredients

Steps

  1. Put 2 cut and bruised lemongrass stalks, 5 pandan leaves, and 7 kaffir lime leaves into a pot.
  2. Add 100 g granulated sugar, 1/2 tsp salt, 1/2 tsp ground turmeric, and 325 ml medium thick coconut milk, then stir.
  3. Cook over medium heat while stirring constantly until it boils so the coconut milk does not split.
  4. Turn off the heat, let it cool to warm, then strain the coconut milk to remove the leaves.
  5. In another bowl combine 200 g tapioca starch, 2 tbsp glutinous rice flour, and 1 tsp instant yeast, stirring until even.
  6. Pour in the strained coconut milk a little at a time while stirring until the batter is smooth.
  7. Cover the batter with a clean cloth then let it rest for 20 minutes.
  8. Whisk 3 eggs with 100 g granulated sugar and 1/2 tsp vanilla powder until the sugar dissolves.
  9. After 20 minutes, stir the flour batter, then add the egg mixture and stir again.
  10. Add 50 g melted margarine and stir until evenly combined.
  11. Cover the batter with a clean cloth then let it rest for 60 minutes.
  12. After 60 minutes, stir the batter then move it to a measuring jug so it is easier to pour.
  13. Turn the heat to the lowest setting, put an old baking tray on the stove, then set the moulds on it until hot.
  14. Pour the batter to only 3/4 of the mould because it will rise.
  15. Cook until many holes appear then cover the moulds so they cook more evenly, about 45 minutes in total.
  16. Once the top starts to dry, flip the cakes and cook about one more minute.
  17. Take the bika ambon out of the moulds, then wipe the moulds with a dry cloth before pouring the next batch.
