Awug Awug: Steamed Glutinous Rice and Coconut Cakes

Open offline saves

Ingredients

Steps

  1. Prepare a bowl and add 250 g glutinous rice flour.
  2. Add 500 g grated coconut using only the white part, half a teaspoon of salt and half a teaspoon of vanilla powder.
  3. Stir with a spoon until the mixture is loose and crumbly and the flour is combined with the coconut; do not squeeze or press it or it will clump.
  4. If any lumps form, break them up by pressing them against the side of the bowl with a spoon.
  5. Spoon the mixture into talam moulds and level it without pressing it down, so the cakes do not harden as they cool.
  6. Push one cube of palm sugar into each mould, only slightly, not too deep, and repeat until finished.
  7. Put the moulds into a preheated steamer and steam for about 15 minutes over medium-low heat, with the steamer lid wrapped in a clean cloth.
  8. After 15 minutes, lift the moulds out of the steamer, then turn the cakes out of the moulds.
