Banana Leaf Awuk-Awuk with Palm Sugar

  1. Set out a dry, clean bowl, then put 500 grams white glutinous rice flour into it.
  2. Add 60 grams granulated sugar, 400 grams medium-mature grated coconut from 1 coconut, 1 teaspoon salt, plus 1/2 teaspoon vanilla powder.
  3. Mix until evenly blended, rubbing it with your hands so it comes together faster.
  4. Set out washed banana leaves 10 cm wide by 24 cm long.
  5. Turn on the stove, then warm the banana leaves until they wilt so they do not tear easily.
  6. Take 150 grams palm sugar that has been cut into small slices beforehand.
  7. Fold each banana leaf into a cone shape.
  8. Spoon about 2 teaspoons of the mixture into the leaf, add some palm sugar, then top it with more of the mixture.
  9. Close the parcel, then trim off the excess banana leaf.
  10. Repeat the same way with the rest of the mixture until it is used up.
  11. Put the parcels into the preheated steamer, then steam for 15 minutes over medium heat.
  12. After 15 minutes open the steamer, take them out, then steam the next batch for 15 minutes.
