Ingredients

Topping:

Steps

  1. Put the instant yeast, sugar, and warm water into a cup, then stir until combined.
  2. Cover the cup and leave it for about three to five minutes until the yeast rises and foams, which shows it is still active.
  3. Put the wheat flour, icing sugar, milk powder, and egg yolks into a bowl.
  4. Pour in the activated yeast mixture, then stir until evenly combined and the dough is half smooth.
  5. Carry on kneading by hand; if the dough feels too dry you may add one tablespoon of water.
  6. Add the margarine and emulsifier, then knead again, spreading and pressing the dough as if squeezing it so the margarine works through it quickly.
  7. Round the dough, return it to the bowl, cover with plastic wrap or a clean cloth, then leave it for about 60 minutes until doubled in size.
  8. For the filling, put the cornstarch, sugar, and liquid milk into a pot, then stir until evenly combined.
  9. Add the grated cheese, then stir again until evenly combined.
  10. Cook over medium heat while stirring constantly until thick and bubbling, then turn off the heat and set it aside to cool.
  11. Punch down the dough once it has doubled in size.
  12. Divide the dough into pieces of about 40 grams each, then roll them one by one until smooth.
  13. Place the pieces on baking paper in order, starting with the first one you rounded.
  14. Flatten the edges of each piece and leave the centre thick so it does not leak or tear while frying.
  15. Spoon enough filling into the middle, then seal and round the dough again so the filling is fully enclosed and the surface is smooth.
  16. Cover the dough with a clean cloth, then rest it for about 30 minutes until risen.
  17. Heat oil in a pan over medium low heat, then add the dough a few at a time as they will expand.
  18. Fry and turn them only once, after they are golden brown, so they do not soak up much oil.
  19. Once golden brown on both sides, lift them out and drain them in a row so the buns do not get dented.
  20. Once the buns are cool, spread the tops with the leftover filling, a thin layer of margarine, or buttercream.
  21. Grate cheese in long strands over the buns until covered, then tidy them up.
