Ingredients

TOPPING : (to taste):

Steps

  1. Put 1 tsp instant yeast, 1 tsp granulated sugar and 100 ml warm water into a glass, then stir until combined.
  2. Cover the glass and leave it for about 3 to 5 minutes until the yeast rises and foams.
  3. Put 250 g all-purpose flour, 3 tbsp icing sugar and 2 tbsp milk powder into a bowl.
  4. Add 2 egg yolks and the yeast mixture, then stir the dough until evenly combined.
  5. Knead the dough by hand until half smooth; if it is still too dry you may add 1 to 2 tbsp of water.
  6. Add a pinch of salt, 1 tbsp margarine and 1/2 tsp SP emulsifier, then knead until the margarine is absorbed into the dough.
  7. Shape the dough into a ball, return it to the bowl, cover with plastic wrap or a clean cloth, then leave 40 to 60 minutes until doubled in size.
  8. Punch the dough down, round it again, then divide it into portions of about 20 g each, which gives around 15 pieces.
  9. Roll each portion into a ball and lay them out in order on baking paper, covering the waiting dough with a clean cloth so it stays moist.
  10. Cover all the dough with a clean cloth and leave it for about 30 minutes until risen.
  11. Heat the oil, add a batch of dough, then fry over medium-low heat so they cook through evenly and do not brown too fast.
  12. Turn each one over only once, after it has browned, so it does not absorb too much oil.
  13. Once both sides are golden brown, lift them out and drain off the oil, then lay them in a row so they do not get dented and leave them to cool.
  14. Once cool, make a hole in each with a knife or chopstick, then pipe in chocolate spread as filling.
  15. For the bomboloni, dust the tops with icing sugar to taste.
  16. For the roti jabrig, brush the tops with buttercream, custard or margarine so the cheese sticks, then add cheese grated into long strands to taste.
