Wrapper Ingredients:

Filling Ingredients:

Steps

  1. Put 2 eggs, 20 g icing sugar, 1/4 tsp salt and 320 ml full cream milk into a bowl, then stir until evenly combined.
  2. Add 150 g all-purpose flour, then stir again until the batter is evenly combined.
  3. Strain the batter to make sure there are no lumps.
  4. Add 30 g melted margarine, then stir until evenly combined.
  5. Add a little food colouring, about 3 drops, then stir again until evenly combined.
  6. Set the heat to low, warm a 24 cm non-stick pan, brush it thinly with cooking oil, then spread the oil with a tissue.
  7. Pour one ladle of batter into the hot pan and swirl it so the batter spreads evenly, then cook until the surface is dry.
  8. Once the surface is no longer wet and the edges lift slightly, release the pancake by turning the pan over; do not let it dry out too much so it stays pliable.
  9. Stack the pancakes so they stay moist, then cook the rest of the batter, which makes about 20 sheets.
  10. Put 200 ml cold liquid whipping cream into a bowl, then beat at maximum speed for about 3 minutes until it thickens into cream.
  11. Add 80 ml sweetened condensed milk, then beat again until evenly combined.
  12. Take one pancake, pipe cream onto it, place pieces of mango on the cream, then pipe more cream over the top.
  13. Fold the pancake into an envelope, then repeat until all the pancakes are filled.
  14. Keep the pancakes in an airtight container and chill them for about 1 hour since they taste better cold.
