Ingredients

* Caramel Sauce:

*Chocolate Cake:

*Creamcheese Flan:

Steps

  1. Turn the heat to low, put 100 g of granulated sugar into a pan, then let it melt into caramel while swirling the pan rather than stirring with a spoon.
  2. Mix 2 tablespoons of water with 1 tablespoon of lemon juice, pour it into the caramel, then stir until combined.
  3. Pour the caramel sauce into a 24 cm non-stick tin, swirl the tin so the caramel coats it evenly, then set aside.
  4. Sift 102 g wheat flour, 20 g cocoa powder, 10 g milk powder, and 2 teaspoons baking powder together, then set aside.
  5. Beat 102 g fine sugar with 195 g margarine at maximum speed for about 8 minutes until fluffy and pale.
  6. Add the 3 eggs and the dry ingredients alternately while mixing at medium speed until combined.
  7. Add 3 tablespoons of liquid whipping cream, then fold with a spatula until the batter is smooth and set it aside.
  8. Blend 225 g cream cheese, 4 egg yolks, 6 eggs, 535 g sweetened condensed milk, 160 g evaporated milk, 2 teaspoons vanilla, and 200 ml liquid milk until smooth.
  9. Strain the cream cheese mixture to make sure there are no lumps.
  10. Pour the chocolate cake batter over the set caramel, then level it with a spatula.
  11. Pour the cream cheese flan mixture slowly over the chocolate cake batter.
  12. Cover the tin with aluminium foil.
  13. Put a square tray on the lowest oven rack, set the filled tin on it, then pour hot water into the tray to about one finger joint deep.
  14. Bake at 150 degrees Celsius with top and bottom heat for 60 minutes until a skewer comes out clean.
  15. Carefully take the tin out of the oven, remove the foil, then let it cool.
  16. Cover the tin with foil again, then chill in the fridge for at least 4 hours or overnight until set.
  17. Warm the tin in hot water for about 5 to 10 minutes, turn the cake out of the tin, then slice and serve cold.
