Ingredients

Coconut Filling Ingredients:

Sago Cake Ingredients:

Steps

  1. For the coconut filling, put the water, finely shaved palm sugar, salt, pandan leaves, and granulated sugar into a wok.
  2. Cook over medium heat until the sugar has dissolved and the liquid comes to a boil.
  3. Add the grated coconut, then cook while stirring constantly until the liquid is absorbed and the coconut is dry to the touch.
  4. Turn off the heat, let the steam die down, then chill the filling in the fridge.
  5. Once cold, shape the coconut filling into small balls so it is easy to put into the moulds.
  6. Bring water to a boil in a pot over medium heat, then add the pearl sago.
  7. Cook the pearl sago for about 10 to 15 minutes until translucent, then turn off the heat and drain it.
  8. Rinse the pearl sago with water to stop it cooking further so it does not fall apart, then drain it again and let it dry.
  9. Put the sugar, vanilla powder, salt, tapioca flour, and plain jelly powder into a wok, then stir until evenly combined so the jelly powder does not clump when the liquid goes in.
  10. Pour in the coconut milk and pandan paste, then stir until evenly combined.
  11. Add the drained pearl sago, then stir again until evenly combined.
  12. Cook over medium heat while stirring constantly until it boils, bubbles, and thickens, then turn off the heat.
  13. Brush the bell shaped moulds with a thin layer of cooking oil.
  14. While the mixture is still hot, spoon about one tablespoon into each mould.
  15. Place a ball of coconut filling in, then press it down gently.
  16. Spoon in more of the sago mixture until the filling is covered and the moulds are full, then repeat until all the mixture is used.
  17. Steam in a steamer with already boiling water for about 20 minutes over medium heat, with the steamer lid wrapped in a clean cloth and not closed too tightly so the cakes do not spread out of the moulds.
  18. Take the cakes out of the steamer.
  19. Chill the cakes in the fridge for about 30 minutes, then unmould them by pressing the mould or easing them out with a spoon.
