Beef Meatballs in Clear Savoury Broth

Open offline saves

Ingredients

Meatball Broth:

To serve:

Steps

  1. Wash the beef, trim off the sinew, then cut it into pieces so it is easier to grind.
  2. Bring water to a boil in a pot ready for cooking the meatballs.
  3. Put the beef into a food processor, then grind it.
  4. Once the meat is half ground, add the crushed ice, then carry on processing until the meat is smooth and evenly combined.
  5. Add the egg white, the sliced and fried garlic, baking powder, ground pepper, salt, and tapioca flour.
  6. Process again until the mixture is smooth and evenly combined, then transfer it to a bowl.
  7. Turn off the heat once the water boils, then add two tablespoons of cooking oil to the hot water.
  8. Have a bowl of water ready for rinsing the spoon so it does not stick to the mixture.
  9. Wet your hands with a little water, take some of the mixture, then squeeze it out of your fist into a ball.
  10. Scoop the ball off with a spoon, drop it into the hot water, then repeat until all the mixture has been shaped.
  11. Turn the heat to low, then simmer the meatballs until they all float; keep the heat low so they stay springy rather than soft.
  12. Lift the meatballs out and drop them into iced water to stop the cooking, then drain them.
  13. For the broth, bring water to a boil in a pot, add the beef bones, then boil for about five minutes until all the scum comes out.
  14. Lift out the bones, discard that first batch of water, then replace it with fresh boiling water so the broth stays clear.
  15. Return the bones to the fresh water, then simmer until the stock develops.
  16. Add the finely chopped and fried garlic, salt, and ground pepper, then taste and adjust the seasoning.
  17. Add the finely sliced spring onion and celery leaf, stir well, then turn off the heat.
  18. Arrange egg noodles or rice vermicelli with the mustard greens in a bowl, then add the meatballs.
  19. Ladle the broth over the top, scatter over fried shallots, then serve with boiled chilli sambal, sweet soy sauce, and chilli sauce to taste.
