Springy Beef Meatballs in Clear Broth

Open offline saves

Ingredients

Meatball Broth:

Steps

  1. Put the washed beef into the chopper along with the ice, then process until the meat is finely ground.
  2. Add the egg white, tapioca flour, sliced and fried garlic, baking powder, ground pepper, and salt.
  3. Process again until the mixture is smooth and evenly combined, then transfer it to another bowl.
  4. Bring water to a boil in a pot, add two tablespoons of cooking oil, then turn off the heat once it boils.
  5. Have a bowl of water ready for rinsing the spoon, rub your hands with a little cooking oil, then shape the mixture into balls.
  6. Drop the balls into the hot water until all the mixture is shaped.
  7. Simmer the meatballs over low heat until they all float, so they stay springy rather than soft, then lift them out and drain.
  8. Put the meatballs straight into iced water so they stop cooking and stay springy.
  9. Bring water to a boil in a pot, add the beef leg bone and beef trimmings, then boil for about 10 minutes until the scum comes out.
  10. Lift out and drain the bone and trimmings, then discard that first batch of water so the broth stays clear.
  11. Put fresh water in the pot, return the boiled bone and trimmings, then simmer over medium heat until the stock develops, skimming off any scum.
  12. Grind the garlic, shallots, toasted candlenuts, and fried garlic with a little cooking oil in the chopper.
  13. Heat a little oil in a pan, then fry the spice paste until fragrant and turn off the heat.
  14. Stir the fried spice paste into the broth until evenly combined.
  15. Add the ground pepper, salt, and sugar, then stir and adjust the seasoning.
  16. Add the cooked meatballs and the spring onion, then cook until all the meatballs float and the broth returns to a boil.
  17. Serve the meatballs topped with fried shallots and celery leaf.
