Steps

  1. Mix 350 g high-protein wheat flour, 50 g tapioca starch, 1 teaspoon salt, and 1 teaspoon powdered stock, then stir until combined.
  2. Lightly beat 2 eggs, add 1 teaspoon of cooking oil and enough water to bring the liquid to 165 ml in total, then stir well.
  3. Add the liquid to the flour mixture a little at a time, then work the dough into noodles.
  4. Dust the noodles with a little flour so they do not stick together.
  5. Bring water to a boil with 2 tablespoons of cooking oil, then boil the egg noodles for about 3 minutes until half cooked.
  6. Lift out the noodles and immediately rinse them with room temperature water to stop the cooking, then strain and drain.
  7. Cut up 150 g cabbage, 3 stalks spring onion, 100 g mustard greens, and 1 tomato.
  8. Slice 200 g of meatballs.
  9. Grind 1 teaspoon peppercorns, 8 shallots, 3 toasted candlenuts, and 4 cloves of garlic.
  10. Heat a little oil in a wok, then saute the spice paste until fragrant and cooked.
  11. Add 100 g of peeled prawns and the sliced meatballs, then cook until the prawns change colour.
  12. Push everything to the side of the wok, add 2 lightly beaten eggs, scramble them until set, then mix everything together.
  13. Add a little water, and once it boils add the cut vegetables and cook briefly until the greens wilt slightly.
  14. Add the drained noodles, then toss until evenly combined.
  15. Add 2 tablespoons oyster sauce, 8 tablespoons sweet soy sauce, half a teaspoon salt, half a teaspoon powdered stock, 1 teaspoon granulated sugar, and 1 teaspoon sesame oil.
  16. Toss well and cook until the seasoning is absorbed and the noodles are done, then adjust the seasoning.
  17. Add the sliced spring onion and tomato, then toss until evenly mixed.
  18. Add bird's eye chillies to taste, toss well, then serve while hot.
