Ingredients

Steps

  1. Put 400 g sago starch and 2 pandan leaves that have been washed, patted dry and cut up into a wok.
  2. Dry-roast over medium-low heat, stirring constantly, for about 15 minutes until the flour feels light and the pandan leaves are dry and brittle.
  3. Turn off the heat, take the pandan leaves out of the flour, then let the flour cool before using it.
  4. Put 200 g margarine and 250 g icing sugar into a bowl, then stir only briefly until combined so the cookies do not spread while baking.
  5. Add 2 egg yolks, then stir briefly until evenly combined.
  6. Add 110 ml milk, then stir again until evenly combined.
  7. Sift the cooled sago starch and 60 g cocoa powder into the mixture.
  8. Stir the dough until evenly combined and smooth.
  9. Put the dough into a piping bag fitted with a nozzle, or use a dahlia cookie press.
  10. Pipe the dough onto a tray greased with margarine, then place chocolate chips on top.
  11. Bake on the lower rack of a preheated oven at 180 degrees Celsius with top and bottom heat for about 25 minutes until the cookies are done.
  12. Take the tray out of the oven, bake the remaining dough the same way, and let the cookies cool before lifting them off the tray.
  13. Once cool, pack the cookies into an airtight jar so they stay crisp and keep well.
