Ingredients

Steps

  1. Prepare a pan and add 300 g sago starch and 2 pandan leaves cut into small pieces.
  2. Dry-roast it, stirring constantly, for about seven minutes until the flour feels lighter and the pandan leaves dry out, then turn off the heat.
  3. Transfer the flour to a pot and discard the dried pandan leaves.
  4. Add 2 tbsp milk powder, 50 g cornstarch and 50 g medium-protein wheat flour, then stir until evenly combined.
  5. Sift the flour mixture to make sure there are no lumps.
  6. In another bowl put 225 g margarine and 150 g powdered sugar, then beat for about 2 minutes until smooth and soft, but no longer than that.
  7. Add 3 egg yolks one at a time, stirring until evenly combined.
  8. Add 175 g grated cheese, then stir again until evenly combined.
  9. Add the sifted flour mixture, then stir until the dough comes together and can be shaped.
  10. Knead the dough by hand; if it is not soft or smooth enough, add a little more margarine.
  11. Fill a piping bag fitted with a nozzle with the dough.
  12. Grease a baking tray thinly with margarine, then pipe the dough onto the tray in whatever size you like.
  13. If the dough still breaks as it is piped, add a little margarine and knead it again.
  14. Sprinkle grated cheese on top of the piped cookies.
  15. Preheat the oven, put the tray in, then bake at 180 degrees Celsius for about 30 minutes until the cookies are done.
  16. Once they are golden brown, take the tray out and let them cool completely, then lift the cookies off the tray.
  17. Store the cookies in an airtight container so they keep longer and do not go soft.
