Ingredients

Topping:

Steps

  1. Grease a 20 by 20 cm tin thinly with margarine, then line it with baking paper or dust it thinly with flour.
  2. Put 3 eggs, 250 g granulated sugar and 1/2 tsp SP emulsifier into a bowl; the SP may be skipped if you want a fudgy, chewy texture.
  3. Beat for about 10 minutes until the batter is voluminous, thick and leaves a ribbon trail.
  4. Sift 90 g medium-protein flour and 45 g cocoa powder into the batter, then add 1/4 tsp salt.
  5. Fold briefly so the flour does not fly out, then mix on low speed for about 30 seconds until evenly combined.
  6. Continue folding with a spatula to make sure the batter is fully combined.
  7. Add 1/2 tsp vanilla and 175 g melted margarine, then fold gently from the bottom up until no liquid is left settled in the batter.
  8. Pour the batter into the tin, level it with a spoon or spatula, then tap the tin a few times so trapped air can escape.
  9. Bake in a preheated oven at 180 degrees Celsius with top and bottom heat for about 30 minutes until the cake is done.
  10. Test the cake with a skewer; if no batter clings to it the cake is baked, then take the tin out of the oven and turn the cake out while it is still hot.
  11. Peel off the baking paper and leave the cake until it cools.
  12. Warm 100 g chocolate spread in the oven at 180 degrees Celsius for about 3 minutes so it loosens, then transfer it into a piping bag.
  13. Once the cake is cool, cut it as you like, then pipe the chocolate spread over each slice.
  14. Draw a pattern through the chocolate spread with a satay stick or skewer as you like.
