Ingredients

Sago Pudding Ingredients:

Mango pudding:

Steps

  1. Bring water to the boil in a pot, add 70 g sago pearls, then boil for 10 minutes.
  2. Open the lid, stir the sago so it does not scorch on the bottom, turn off the heat, cover the pot again, then leave it for 30 minutes.
  3. Open the pot and stir the sago, then turn the heat back on, cover, and boil for about 7 minutes.
  4. Open the lid, stir the sago, turn off the heat, cover again, then leave it about 5 minutes until the pearls are all translucent.
  5. Drain the sago, rinse it with cooled boiled water, then drain again and set aside.
  6. Peel 1 kg of ripe mangoes, cut them up, and set aside.
  7. Put 1 packet of white agar powder, 1 packet of plain nutrijel, 200 g granulated sugar, 1 tbsp cornstarch, and a pinch of salt into a pot, then stir until evenly combined.
  8. Add 1200 ml liquid milk, 200 ml liquid whipping cream, and 1 tsp vanilla, then stir until the cornstarch dissolves.
  9. Cook over medium heat, stirring constantly, until it boils, then turn off the heat.
  10. Keep stirring until the steam has gone and the mixture is just warm.
  11. Add the reserved sago pearls, then stir until evenly combined.
  12. Put half of the cut mango into the mould.
  13. Stir the pudding mixture, then pour it into the mould, leaving room for the mango layer.
  14. Blend the remaining mango in a chopper until smooth, then set aside.
  15. Put 1 packet of white agar powder and 100 g granulated sugar into a pot, stir until even, then add 500 ml water and stir again.
  16. Cook over medium heat until it boils, stirring now and then, then turn off the heat.
  17. Pour in 350 g of the blended mango, then stir until evenly combined.
  18. Once the sago pudding layer has firmed up, prick the surface lightly with a toothpick or fork so the layers bond together.
  19. Stir the mango pudding mixture, then pour it into the mould.
  20. Leave until the pudding sets, then chill in the refrigerator for about 2 hours.
  21. Turn the pudding out of the mould, then slice and serve.
