Ingredients

Steps

  1. Put the cooked white rice, sugar, wheat flour, rice flour, instant yeast, and room temperature water into a chopper or blender.
  2. Blend until the batter is smooth and evenly combined.
  3. Strain the batter to make sure there are no lumps.
  4. Cover the batter with plastic wrap or a clean cloth, then leave it for at least about three hours until risen.
  5. Stir the batter until even, to break up the air bubbles inside.
  6. Add the salt, then stir until evenly combined.
  7. Divide the batter into six equal parts.
  8. Add about five drops of food colouring to each part, then stir until the colour is even.
  9. Grease the moulds with a thin layer of cooking oil, then pour in the batter until the moulds are full.
  10. Do not pour the waiting batter into moulds ahead of time, and stir it again before pouring so the cakes have a fine crumb.
  11. Steam in a steamer with already boiling water for about 20 minutes until the cakes are cooked and the surface is dry, with the steamer lid wrapped in a clean cloth.
  12. Take the cakes out of the steamer, then unmould them while still hot by pressing the mould.
  13. Steam the remaining batter the same way.
  14. Mix the white part of the grated coconut with the salt and pandan leaf, then stir until evenly combined.
  15. Steam the coconut for about five minutes so it does not spoil quickly, then take it out and let it cool.
  16. Serve the kue apem with the grated coconut sprinkled over.
