Open offline saves

Ingredients

Steps

  1. Prepare a bowl and add 1 kg grated cassava, 160 g tapioca starch, half a teaspoon of salt, a quarter teaspoon of vanilla powder, 325 g granulated sugar and 650 ml medium-thickness coconut milk, then stir until evenly combined.
  2. Divide the mixture into two equal parts.
  3. Add 1 tsp white food colouring to one part and 1 tsp pandan paste to the other, then stir until evenly combined.
  4. Grease a 20 x 20 cm tin with cooking oil.
  5. Put the tin into a steamer whose water is already boiling.
  6. Stir the pandan mixture first, then pour about 2 spoonfuls into the tin and spread it with a spoon or spatula, keeping it thin so it rolls easily.
  7. Steam for about 7 minutes over medium heat until the surface is no longer wet, with the steamer lid wrapped in a clean cloth.
  8. After about 7 minutes, stir the white mixture, then pour 2 spoonfuls over the top and spread it out.
  9. Steam for another 15 minutes over medium heat until the cake is cooked.
  10. Take the tin out of the steamer and leave the cake until cold.
  11. Repeat until all the mixture has been steamed, making four trays in total.
  12. Take 200 g grated coconut using only the white part, add half a teaspoon of salt and 1 pandan leaf, then stir until evenly combined.
  13. Steam the grated coconut for about 5 minutes over medium heat so it does not spoil quickly, then leave it to cool.
  14. Once the cake is cold, run a knife around the edges and turn it out of the tin.
  15. Flip the cake so the green side is on top, then roll it up.
  16. Trim the ends of the roll to neaten it, then cut it into pieces as you like.
  17. Roll the surface of each piece in the cooled grated coconut, and repeat until finished.
