Ingredients

Coconut Milk Layer:

Steps

  1. Cut 10 washed pandan leaves with scissors so they are easier to blend.
  2. Put the pandan leaves and 250 ml of water into a blender, blend until smooth, then strain the pandan juice.
  3. Prepare a pot, add 200 grams of rice flour, 50 grams of tapioca starch, 175 grams of granulated sugar, and 1 teaspoon of salt.
  4. Pour in the strained pandan juice and 900 ml of medium thickness coconut milk.
  5. Stir until evenly combined so the batter is smooth, silky, and free of lumps.
  6. If the color is not green enough, add green food coloring or pandan paste as needed.
  7. Cook the batter while stirring constantly until it starts to steam and the bottom begins to thicken slightly, then turn off the heat.
  8. Brush a 20x20 cm pan with a thin layer of cooking oil, pour in the pandan batter, then skim the foam off the surface so the cake comes out smooth.
  9. Put the pan into a steamer whose water is already boiling, steam for about 25 minutes over medium heat, and line the steamer lid with a clean cloth so condensation does not drip onto the batter.
  10. While it steams, prepare a bowl for the coconut milk layer with 200 grams of rice flour, 40 grams of tapioca starch, 1 tablespoon of granulated sugar, and 1 teaspoon of salt.
  11. Pour in part of the 800 ml of medium thickness coconut milk, stir until the batter is smooth, silky, and lump free, then add the remaining coconut milk and stir again until evenly combined.
  12. After 25 minutes of steaming and once the surface has set, pour half of the white batter on top.
  13. Continue steaming for about 15 minutes over medium heat.
  14. Pour in the remaining white batter, then continue steaming for about 20 minutes until the cake is cooked.
  15. Once the surface has set and is no longer wet, take the pan out of the steamer.
  16. Let the cake cool completely for about 3 hours so it holds its shape and does not fall apart.
  17. Run a knife around the edges of the pan, turn the cake out, then cut it to the size you like and serve.
