Ingredients

Steps

  1. Prepare a pot and add 400 gr of granulated sugar, 1/2 teaspoon of vanilla powder, 1 teaspoon of salt, 1500 ml of medium-thick coconut milk, and 2 pandan leaves.
  2. Cook over medium heat while stirring constantly until it boils and the sugar dissolves, so the coconut milk does not split.
  3. Turn off the heat and leave the coconut milk to cool.
  4. Prepare a bowl and add 625 gr of tapioca flour and 125 gr of all-purpose flour.
  5. Pour in part of the cooled coconut milk, then stir until the batter is smooth, silky, and free of lumps.
  6. Pour in the rest of the coconut milk, stir until evenly combined, and strain the batter if any lumps remain.
  7. Divide the batter into three parts, one part of 1100 ml and two parts of 550 ml each.
  8. Dissolve 1/2 teaspoon of white food coloring in a little hot water, pour it into the 1100 ml portion of batter, then stir until evenly combined.
  9. Dissolve 1 teaspoon of cocoa powder in a little hot water, pour it into one 550 ml portion of batter, then stir until evenly combined.
  10. Add 1/2 teaspoon of pandan paste to the last 550 ml portion of batter, then stir until evenly combined.
  11. Thinly grease a 20 x 20 cm tin with cooking oil, then pour in 150 ml of batter for the first layer.
  12. Place the tin into a steamer whose water is already boiling, line the steamer lid with a clean cloth, then steam for about 5 minutes over medium heat.
  13. Pour in 110 ml of the green batter, then steam for about 4 minutes.
  14. Pour in 110 ml of the white batter and steam for about 4 minutes until set, then repeat the same way, alternating the colors, until all the batter is used up.
  15. Steam the last layer for about 20 minutes until the cake is fully cooked through.
  16. Take the tin out of the steamer, then leave the cake until it is completely cool, about 4 hours.
  17. Run a knife around the edge of the cake, then turn it out of the tin.
  18. Slice the cake with a knife wrapped in plastic so the cake does not stick to it, then serve.
