Steps

  1. For the chocolate flavor, stir 200 g butter, 150 g brown sugar, and 50 g granulated sugar until evenly combined and smooth.
  2. Add 2 eggs, 1/2 tsp salt, and 1 tsp vanilla, then keep stirring until evenly combined.
  3. Add 350 g low-protein flour, 30 g cornstarch, 2 tsp baking powder, and 1 tsp baking soda, then keep stirring until evenly combined.
  4. Add 200 g chopped couverture chocolate and 75 g chocolate chips, then stir briefly just until combined.
  5. Roll the dough into balls of about 80 g each, then chill them in the freezer for about 30 minutes so they bake up crisp and do not spread too much.
  6. Bake in an oven preheated for 10 minutes at 180 degrees Celsius with top and bottom heat for about 15 minutes, until the cookies are done and spread out.
  7. Lift the cookies off the tray, let them cool, then store them in a jar or an airtight container.
  8. For the red velvet flavor, make the base dough the same way, and once the butter and sugars are combined add 1 tsp red velvet paste and stir until evenly combined.
  9. Add the flour, cornstarch, baking powder, and baking soda, then keep stirring until evenly combined.
  10. Add 75 g sliced almonds, 75 g chocolate chips, and 200 g chopped chocolate, then stir just until combined.
  11. Take about 60 g of dough, put cheese spread in the center, roll it up, then chill it in the refrigerator about 30 minutes and bake it the same way.
  12. For the matcha flavor, add 10 g matcha powder to the base dough.
  13. Add sliced almonds and chopped white chocolate, stir just until combined, then shape, fill with cheese spread, chill, and bake as before.
