  1. Prepare 1 free range chicken, or use broiler chicken breast or thigh as you prefer.
  2. Prepare 2 stalks of spring onion, using the white part and the lighter green part.
  3. Cut the spring onion into a few pieces.
  4. Prepare about 4 slices of ginger.
  5. Save the green part of the spring onion for making the scallion oil later.
  6. Add the ginger and spring onion into the pot with the chicken so the stock is more aromatic.
  7. Pour 2 1/2 litres of water into the pot.
  8. Season with 1 tbsp cooking wine.
  9. Add 1 tbsp mushroom stock powder.
  10. Add 1 1/2 tsp salt.
  11. Add 1 tbsp sesame oil.
  12. Add 1/2 tsp white pepper.
  13. Cook over low to medium heat for 45 minutes until the chicken is done.
  14. Lift the chicken out onto a plate, and set the stock aside for cooking the Hainanese rice.
  15. Prepare 700 g of rice that has been soaked for half an hour.
  16. Heat a wok, then add about 2 tbsp vegetable oil.
  17. Add 2 segments of finely chopped ginger.
  18. Add 7 finely chopped cloves of garlic.
  19. Saute until golden, and be careful because it burns easily.
  20. Add the sauteed garlic into the rice cooker with the washed rice.
  21. Add 2 1/2 tbsp sesame oil.
  22. Add 1 tbsp light soy sauce.
  23. Add 2 tbsp oyster sauce.
  24. Add 1/2 tsp ground white pepper, then stir until even.
  25. Pour in 750 to 770 ml of the chicken stock you made earlier.
  26. Cook the rice in the rice cooker until done.
  27. For the scallion oil, finely chop 3 cloves of garlic.
  28. Finely chop 1 tbsp of ginger.
  29. Finely chop the 6 stalks of spring onion you prepared earlier.
  30. Add 1 tbsp sesame oil.
  31. Add 1 tsp sugar.
  32. Add 1 tsp oyster sauce.
  33. Add 1 tsp light soy sauce.
  34. Add a pinch of salt and 1/4 tsp white pepper.
  35. Pour about 4 tbsp of hot vegetable oil over the chopped ginger and spring onion.
  36. Stir until all the hot oil coats the chopped spring onion and ginger mixture.
  37. For the sambal, prepare 5 cloves of garlic, 12 curly chillies, and about 4 red bird's eye chillies to taste.
  38. Add 3 tbsp of water to make blending easier, then blend the sambal.
  39. Move the blended sambal into a pot, and a slightly coarse texture is fine.
  40. Add 1 tbsp sugar.
  41. Add 2 tbsp rice vinegar.
  42. Add 1/3 tsp salt, then stir until even.
  43. Add about 3 tbsp chicken stock, then cook the sambal until done.
  44. Once the sambal is cooked, turn off the heat, and the rice is done too, so serve it with the chicken, scallion oil, sambal, sliced cucumber, and a bowl of chicken stock.
