  1. Prepare 300 g of misoa noodles, and any brand is fine.
  2. Bring a pot of water to a boil, then add the misoa.
  3. Cook for only about 1 1/2 minutes, not longer, or the noodles fall apart and go mushy, then turn off the heat.
  4. Drain the misoa.
  5. Rinse under running water or cold water to stop the cooking so it does not go soggy, then drain again.
  6. Add 3 tbsp vegetable oil straight after draining without waiting, because the noodles will stick, then gently toss until the oil is evenly through.
  7. Set the noodles aside until they cool down a bit so they dry out more.
  8. Crush 5 cloves of garlic, then chop them finely.
  9. Slice 5 shallots, then chop them finely as well.
  10. Slice 2 stalks of spring onion.
  11. Cut 2 carrots into matchsticks.
  12. Cut up 10 green beans.
  13. Prepare 100 g of peeled and cleaned prawns along with 3 eggs.
  14. Heat a wok, add 2 tbsp vegetable oil, then once hot add the eggs and scramble them until cooked.
  15. Add another 1 tbsp vegetable oil, then add the prawns and stir fry until half cooked.
  16. Add the chopped shallots and garlic, then stir fry until fragrant.
  17. Add the cut vegetables, then stir fry briefly until half cooked.
  18. Add the scrambled eggs back in.
  19. Add the misoa noodles, then toss gently so they do not break up.
  20. Add 2 tbsp oyster sauce and 1 tbsp light soy sauce.
  21. Add 1/2 tsp salt, 2 tsp sugar, and 1 tsp ground white pepper, and you can add mushroom seasoning if you like.
  22. Toss over low or medium heat until everything is evenly combined, then turn off the heat and serve.
