IKEA-Style Swedish Meatballs

  1. Soak two slices of white bread in about two tablespoons of milk until completely soft.
  2. Saute the chopped onion in a little oil until cooked through.
  3. Add the chopped garlic, saute until fragrant, then set aside to cool.
  4. Mash the soaked bread into a paste.
  5. Combine the minced beef and minced chicken in a large bowl.
  6. Add the mashed bread along with the sauteed onion and garlic.
  7. Add the nutmeg, allspice, and a little oregano.
  8. Add one egg, salt, pepper, and a little sugar.
  9. Mix everything until thoroughly combined.
  10. Chill the mixture for 10 to 15 minutes so it firms up and the flavours settle.
  11. Bring salted water to the boil and cook the cut potatoes for 15 to 20 minutes until completely tender.
  12. Drain the potatoes and press them through a sieve.
  13. Cook the mashed potato with cream and unsalted butter over low heat, stirring.
  14. Season the mash with salt and pepper and adjust to taste.
  15. Wet your hands and roll the meat mixture into golf ball sized meatballs.
  16. Heat a pan with oil and a little butter.
  17. Brown the meatballs on all sides, turning them for even colour, then lift them out.
  18. Bake the meatballs at 180 degrees Celsius for 10 to 15 minutes until cooked through.
  19. In the pan used for the meatballs, melt unsalted butter.
  20. Add the flour and cook over low heat until the raw flour smell disappears.
  21. Pour in the beef stock a little at a time, whisking until smooth and lump free.
  22. Season with Worcestershire sauce, salt, and pepper, then adjust to taste.
  23. Turn off the heat and stir in a little cream to enrich the sauce.
  24. Serve the meatballs with the mashed potato and pour over the gravy.
